Victorias Favorite Pikelets

Ingredients
  

  • 1 cup self-rising flour
  • 1 tablespoon sugar
  • 1 large egg
  • 1 tablespoon butter melted
  • 1/2 cup milk (or more if needed)

Instructions
 

  • Begin by collecting all the ingredients you’ll need for Victorias Favorite Pikelets: 1 cup of self-rising flour, 1 tablespoon of sugar, 1 large egg, 1 tablespoon of melted butter, and ½ cup of milk (or more if needed).
  • In a mixing bowl, combine the self-rising flour and sugar. Whisk them together until they are well blended.
  • Make a well in the center of the dry ingredients. Crack the large egg into the well, then pour in the melted butter and milk. Use your whisk to gently mix everything together until you have a smooth batter. If the batter seems too thick, add a little more milk, one tablespoon at a time, until you reach your desired consistency.
  • Place a non-stick skillet or griddle over medium heat. Allow it to warm up for a couple of minutes. You can test if it's hot enough by sprinkling a few drops of water onto the surface; if they sizzle, it's ready!
  • Using a ladle or a measuring cup, pour small amounts of batter onto the skillet, forming pikelets about 3 inches in diameter. Cook for 2-3 minutes, or until bubbles start to form on the surface. Flip the pikelets carefully with a spatula and cook for another 2 minutes on the other side, until golden brown.
  • Remove the cooked pikelets from the skillet and place them on a plate. Continue cooking the remaining batter, stacking the pikelets as you go. Serve them warm with your favorite toppings!

Notes

  • For fluffier pikelets, avoid overmixing the batter; a few lumps are fine.
  • Store leftovers in an airtight container in the fridge for up to 3 days and reheat in a toaster or skillet.
  • Customize by adding blueberries, chocolate chips, or different toppings like whipped cream or fresh fruit.
