Ingredients
  

  • 0.5 cup white beans canned, drained and rinsed
  • 2 teaspoons tahini paste
  • 2 teaspoons lemon juice
  • 0.5 teaspoon kosher salt
  • 0.5 avocado peeled and pit removed
  • 4 slices whole-grain bread or your favorite bread, toasted
  • 0.5 cup grape tomatoes cut in half

Instructions
 

  • Start by toasting your slices of whole-grain bread until they reach your desired level of crispiness.
  • In a mixing bowl, scoop out the avocado and use a fork to mash it until it’s smooth but still has some texture.
  • In the same bowl, add the drained white beans, tahini paste, lemon juice, and kosher salt. Mash the mixture gently with the fork to combine, leaving some beans whole for added texture.
  • Spread a generous layer of the white bean mixture onto each slice of toasted bread. Follow this by adding a nice layer of the mashed avocado on top.
  • Finally, sprinkle the halved grape tomatoes over each piece of toast.
  • Plate your White Bean Avocado Toast and dig in! Optionally, add a drizzle of olive oil or a sprinkle of chili flakes for an extra kick.

  • Store white bean mixture and avocado separately in the refrigerator for up to a day to prevent browning.
