- 8 cups popped popcorn plain
- 1 cup light brown sugar packed (or dark brown sugar)
- 8 tablespoons unsalted butter
- 1 teaspoon salt
- 1 cup light corn syrup
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips (or dark or milk chocolate chips)
- 1 teaspoon coconut oil (or shortening, divided)
- 1 cup white chocolate chips
Make the Caramel Sauce
In a medium saucepan over medium heat, combine the light brown sugar, unsalted butter, salt, and light corn syrup. Stir frequently until the mixture comes to a boil. Allow it to boil for 4-5 minutes without stirring.
Remove the saucepan from heat and carefully stir in the baking soda and vanilla extract. The mixture will bubble up, so be cautious! Stir until well combined.
Coat and Bake the Popcorn
Pour the caramel sauce over the popped popcorn. Using a silicone spatula, gently fold the popcorn to ensure it is evenly coated. Be gentle to avoid crushing the popcorn.
Preheat your oven to 250°F (120°C). Spread the coated popcorn onto a parchment-lined baking sheet in an even layer. Bake for 45 minutes, stirring every 15 minutes to ensure even coating.
Melt and Drizzle the Chocolate
While the popcorn is baking, melt the semi-sweet chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring in between until smooth. Repeat with the white chocolate chips in a separate bowl.
Once the popcorn is out of the oven, allow it to cool slightly. Drizzle the melted semi-sweet chocolate over the popcorn, followed by the white chocolate. Use a spatula to give it a gentle mix, if desired.
Allow the Zebra Popcorn to cool completely on the baking sheet. Once set, break it into pieces and serve in bowls or store in an airtight container.
